Quinoa Tabbouleh

Quinoa, (pronounced Keen -Wa) is one of my favorite grains and is actually a seed. It’s high in protein, making it a wonderful balanced protein for vegans, and it’s also easy to digest. Did I mention it’s gluten free? 

Unlike some heavier grains, quinoa leaves me feeling light and energized.  It’s also high in fiber and loaded with magnesium, a mineral that relaxes our systems.

QUINOA TABBOULEH

Ingredients

1 cup quinoa, cooked and cooled

1/2 tsp salt, (preferably celtic sea salt)

1/4 cup extra virgin olive oil

1/4 cup lemon juice

3 fresh tomatoes, diced

1 cucumber, diced

2-3 spring green onions

1 cup fresh parsley

Stir all ingredients together.  Best when allowed to sit for 15 minutes to allow flavors to meld.
